A summer-fresh spin on an Italian classic, our watermelon caprese is refreshingly simple, and a great addition to pizza or a backyard barbecue.

- 1 bunch of fresh basil
- 4 gourmet tomatoes
- 500g block of mozzarella
- One watermelon quarter
- Virgin olive oil
- Balsamic vinegar
- Slice the gourmet tomatoes, mozzarella and watermelon into 0.5cm-thick slices.
- Arrange the slices and the whole basil leaves on a serving plate so they slightly overlap.
- Sprinkle lightly with pepper and salt.
- Combine the olive oil and balsamic vinegar in a small bowl, and serve alongside the salad. For the best flavour, drizzle your salad with this mixture before eating.
